Breakfast: Chia Seed Pudding

 
 If it tastes like a dessert it's good enough for me! In fact, life doesn't get better!  I have tried a few recipes with Chia Seeds recently, and have discovered the ultimate breakfast taste sensation!
 
Chia Seeds are the new super health food, loaded with anti-oxidants, high in protein, and most of the carbs they contain are fiber, making them one of the BEST ways to start the day! I won't bore you with all of the health benefits, but if you are interested have a read here.
 
Now I am definitely no master chef, and even I can recreate chia pudding! Here is how to do it:
Prep time: 5 minutes
Serves: 2
Ingredients
4 tablespoons chia seeds
1 mashed banana
1 cup of almond milk
2 pinches of cinnamon (optional)
1/2 tablespoon unsweetened shredded coconut
1 teaspoon vanilla extract
Preparation
Mash the banana in a mixing bowl
Stir in the chia seeds & shredded coconut
Pour in the almond milk, vanilla extract
Add the cinnamon
Give it all a good mix, cover and pop in the fridge overnight or for at least 2 1/2 hours. 
**For added taste and creamy-ness - try making your own almond milk!**
To Serve
Top with fresh fruits and sliced almonds
Enjoy!

      You can buy them from the big mega mart by the Radisson Blu. They are quite expensive (around QR80) but they last ages as you only ever use a few tbls in a recipe. x
